Commercial Cookery Short Courses are now available at our Broome Campus for Semester 2

In 2023, we are offering several Short Courses in Commercial Cookery for anyone looking to develop their skills or just want to learn something new. Opening doors to new opportunities, these courses will be running throughout 2023 in our new state-of-the-art hospitality facilities at our Broome Campus.

These units are provided as stand-alone Short Courses and can also be studied as part of our SIT30821 CIII Commercial Cookery* Qualification. This course is tuition fee free; the only costs incurred by enrolling will be the resource fee.

 

The following Short Courses will be delivered in Semester 2, 2023:

 

SITHCCC023 Use Food Preparation Equipment

Tuesday to Wednesday | 25 Jul - 27 Jul | 8am – 4pm

Learn how to sharpen, clean and store your knife, as well as several precision vegetable cuts.

 

SITHCCC027 Prepare Dishes Using Basic Methods of Cookery

Tuesday to Wednesday | 22 Aug - 21 Sep | 8am – 4pm

Learn how to boil, simmer, balance, poach, steam, stew, grill, braise, deep fry, shallow fry, bake and roast while making dishes that include Goulash, Risotto, Osso Bucco, Schnitzel and more.

 

SITHCCC028 Prepare Appetisers and Salads

Tuesday to Wednesday | 10 Oct - 26 Oct | 8am – 4pm

Learn how to make salad sauces, simple salads, mixed salads, cold appetisers, hot appetisers, cold canapes and hot finger food while making dishes that include vinaigrette, Italian, Roquefort, coleslaw, Greek salad, Caesar Salad, seafood cocktail, antipasto, BBQ chicken wings, salt and pepper flat head, chicken and fetta parcels and more.

 

SITHCCC030 Prepare Vegetables, Fruit, Egg and Farinaceous Dishes

Tuesday to Wednesday | 7 Nov - 23 Nov | 8am – 4pm

Learn how to make egg pasta dough, couscous salad, cauliflower parmigiana, omelette, quiche Lorraine, special fried rice and many more.

 

SITHCCC031 Prepare Vegetarian and Vegan Dishes

Tuesday to Wednesday | 28 Nov - 7 Dec | 8am – 4pm

Learn how to make quinoa tabouli, lentil salad, vegan goulash, vegan spaghetti bolognaise, Asian pawpaw salad and many more.

*This course is superseded by and is equivalent to SIT30816 Certificate III in Commercial Cookery. (Minor changes to packaging rules. Changes to core and elective units but skills and knowledge within qualifications map to each other and the job outcome of the qualification has not changed).
